Dark Chocolate Cookies With Pistachios And Milk Chocolate Chunks

  • 185 g unsalted butter softened
  • 275 g brown sugar
  • 2 eggs
  • 1 ¼ cups 185g plain flour
  • cup 70g good-quality cocoa
  • 1 teaspoon baking powder
  • 150 g milk chocolate cut into chunks
  • 110 g pistachio kernels
  • 100 g dark chocolate melted


  • Preheat the oven to 180C and line 2 large baking trays with baking paper.
  • Beat the butter and sugar with an electric mixer until thick and pale. Add the eggs, one at a time, beating well after each addition, until well combined. Sift the flour, cocoa, baking powder and a pinch of salt into the butter mixture and beat slowly until well combined. Stir in the milk chocolate and pistachios.
  • Dollop heaped tablespoons of the mixture onto prepared trays. Flatten the dough slightly using damp hands, then bake for 12-15 minutes until cooked through. Cool on trays for 5 minutes, then transfer to a wire rack to cool completely. Once cool, drizzle the cookies with melted chocolate, then allow chocolate to set.
  • Store in an airtight container for 3-4 days.
